摇元宵


  
  
元宵并不是特别做糯米皮裹馅料就可以了,而是把馅放入糯米粉里摇。我个人觉的皮比平常做的方法跟好吃,也不厚,煮汤圆也不易破。


摇元宵 

馅料:
熟黑芝麻粉 
炒香花生粉  (花生粒也可用烤箱150度烤15分钟)
小红葱 3粒 (切片)
猪油 

1)猪油放入锅中,加入小红葱炸香。炸好的猪油和红葱片放凉。

2)黑芝麻粉,花生粉,糖,炸葱片放入大碗里,猪油倒入,但不要一次过下完。把碗里所有的材料拌匀,试一试拙一个小团用手捏成一团,如果成功可以捏成团猪油就不用再加了,如果混合材料不能捏成团就再加入适量油。

3)把所有芝麻花生馅料分成小团滚圆放入冷藏室里,定形。

4)大盆里倒入糯米粉,另外一个大碗倒入凉水。



5)把芝麻花生馅放在筛子上,快速浸入凉水,拿起,倒入糯米粉里,摇晃盆,让馅料裹满糯米粉,用筛子捞起,再快速浸入凉水,拿起,倒入糯米粉,摇晃盆,重复多5次,直到滚好的圆宵变大粒。

6)煮开2锅水,一锅放入椰糖和班兰叶。把圆宵放入另一锅用中火煮到圆宵浮起来时加些凉水,再次煮滚(不能大火,容易裂开)。取出圆宵放入椰糖水中,即可。
