双色年糕(班兰和椰糖)



刚蒸好的年糕颜色比较淡。凉透后颜色较深



班兰口味的很香,比起椰糖的稍微偏软。新年前4天做好放凉透后,收进冰箱里,可以放几个礼拜,因为我只做一个5寸的,所以2个星期就吃掉了。


 双色年糕 (1个5寸模 )
 
下层:椰糖年糕
清水 140ml
糯米粉  120g
椰糖 112g
班兰叶 数片

上层:班兰年糕
糖 160g  (我放约120g)
热水 160ml 
班兰叶 8片
清水 120ml (下次试看用一半的椰浆)
糯米 200g 

香蕉叶 1大叶 (洗净后用滚烫的水烫过,取出)

锡泊纸

1)椰糖层:椰糖,香兰叶,清水放入锅中,用大火滚直到椰糖溶化,放凉,过滤。
糯米粉倒在大盆中,倒入椰糖水,混合均匀,再过滤一次。

2)班兰层:白糖和热水溶化。班兰叶加清水打烂再过滤出班兰汁。
糯米粉和糖水拌匀后加入班兰汁,过滤2次,备用。

3)椰糖粉浆倒入铺好香蕉叶的5寸圆模。盖上锡泊纸,放入预热好的蒸锅里蒸20分钟后,打开锡泊纸倒入班兰层(倒入前,先拌均匀避免粉浆沉淀)

4)继续大火蒸1小时半到2小时。蒸好后出锅,放凉透。
