凉拌酸辣无骨鸡爪



去鸡爪骨真的很考功夫,用挺长时间一只一只脚慢慢去骨。

不过真的很不错。喜欢酸辣甜可以加多点。


酸辣无骨鸡爪(食谱来自:墨妈)

(依据个人喜欢的酸辣咸口味做调整)
材料:
鸡爪 1kg
柠檬 5个
小辣椒 (切粒或剁碎) 5-6条
整粒蒜头 2粒 (切碎)
香菜 3根

酱料:
辣椒粉 1大勺
熟芝麻 1勺
生抽 10勺 
香醋 3勺
白糖 2勺
盐小茶勺

油 4勺

姜片  5-6片
八角 2 个
青葱段 
香叶 数片
料酒 少许



1)鸡爪放入冷锅水里,加入姜片,八角,青葱段,香叶和料酒,大火煮开转中火煮15分钟捞出放入冰水里。

2)去掉鸡爪的指甲,在爪上划几刀去掉骨,用剪刀也可以。(去骨方法可以上网看看,我忘了拍)。


3)辣椒粉,蒜米,小辣椒,熟芝麻放入碗中。锅里放入4勺油,开火把油煮烧。淋入碗里,加入生抽,白糖,盐和香醋混合均匀。

4)柠檬切片去掉籽,放上香菜放在鸡爪上,淋上调味料,抓均匀,冷藏腌3-4小时就可以吃了。
